Gazpacho is a cold soup made of raw blended vegetables – quick preparation time, extremely refreshing, and rich in flavor.


Summer Gazpacho

Easy to make gazpacho

  • 5 large Tomatoes/Cucumbers
  • 1 big Red/Green pepper
  • 3 Garlic cloves (Crushed)
  • 1/3 cup Olive oil
  • 4 tbsp Wine vinegar
  • 1 small Onion (Peeled and halved)
  • 1-2 Bread slices ((without the crust))
  • Salt and Pepper (to your taste)
  • 6-8 Ice cubes
  1. Combine all ingredients in a food processor or using a manual blender – blend at high speed until very smooth
  2. If needed, add up to 1/3 cup water
  3. Transfer to a large container and refrigerate for at least one hour

Serve with optional fresh topping:

  1. Thinly sliced cucumber
  2. Olive oil
  3. Sesame seeds
  4. Fresh basil/coriander leaves, or edible flowers
